In 1998 Bleu Evolution was born. Over the years, Bleu evolved into many different styles and flavors. Now Bleu is under the ownership of Alfonso Hernandez. The cuisine is Italian trattoria style restaurant and full-service bar that presents a wine offering of Italian varietals and local favorites.

  • "Bleu Evolution is known for its funky décor. Billowy lengths of red drape the windows. An eclectic mix of paintings and nick-knacks punctuate brick and rustic faux-painted walls. Pendulous crystal chandeliers hang from the high ceiling. Chairs are cushioned and upholstered with vintage fabric. The menu is mostly Italian, but for good measure includes a few different favorites, like Spanish paella, etouffe, and a Mediterranean hummus and falafel appetizer place.."
